Cauliflower is such a versatile vegetable. It can be served so many ways! I admit that I have never been a huge fan of raw cauliflower. However, roasted cauliflower has become my go to vegetable as of late. Roasted cauliflower is simply amazing. It really is a descendant flavor. The bonus to using cauliflower is that it can take on the flavor of the spices you use. I have a recipe coming soon with roasted cauliflower that resembles buffalo chicken wings!
Making roasted cauliflower bites couldn’t be easier. Cut the cauliflower into bite sized pieces. Put the cauliflower in a plastic bag. Add the butter and coconut oil to the bag followed by the spices. Give the bag a few good shakes to coat the cauliflower. Then all you need to do is roast the cauliflower in the preheated oven. Make sure you turn the cauliflower a few times during the baking time. This will allow the cauliflower to brown on all sides.
- 1 large head of cauliflower
- 1¾ tbsp melted butter
- 2 tbsp melted coconut oil
- 1 tsp sea salt
- ¾ tsp black pepper
- ½ tsp smoked paprika
- Preheat oven to 425 degrees
- Cut up cauliflower into small pieces and wash and dry them.
- Place cauliflower into a large ziplock bag and pour over the melted butter and coconut oil, salt, pepper and paprika. Shake the bag until cauliflower is well coated.
- Place parchment paper on a baking sheet and place cauliflower pieces onto a baking sheet.
- Bake for 40 minutes turning several time so that the cauliflower browns evenly. The browned edges of the cauliflower make it decadent!
- Remove from oven when cauliflower is lightly browned and soft.
- Serve plain or with your favorite dipping sauce.
Serve as side dish or appetizer. Great dipped in ranch dressing or a spicy wing sauce.
