Last week I came across some ground turkey on discount. I decided to make a healthier version of meatloaf since I am trying to cook healthier. I used a muffin pan since traditional meatloaf takes so long to cook. My boys loved these meatloaf muffins!
Meatloaf Muffins
1 pound ground turkey
1/2 pound ground beef
1 teaspoon olive oil
1/2 cup diced onion
1 clove garlic, pressed or diced
1/2 cup Italian Bread Crumbs
2 eggs, beaten
2 teaspoons Worcestershire sauce
1 teaspoon parsley
Preheat oven to 350 degrees.
Heat a frying pan with the olive oil over medium heat. Add onions and cook for about 5 minutes. Add garlic and cook for 2 minutes. Remove from heat and let cool.
In a large bowl comine turkey, beef, onion mixture, bread crumbs, eggs and seasoning. I take off my rings and use my hands to mix the meat mixture.
Spray a 12 count muffin pan with cooking spray. Spoon meat mixture into muffin pan. Bake at 350 degrees for 25-30 minutes. The meat thermometer must reach 160 degrees when done.
I placed mashed potatoes on top of the meatloaf muffins to make it look like a cupcake!
Tips
- Use lean ground beef; otherwise there will be fat in the muffin cups.
- Turkey is a little dryer than beef. Mixing the two is a nice combination.
- Add in pureed vegetables. I bet you could add some spinach and no one would know!

this is another good turkey recipe….
Turkey Sloppy Joes
1 pound ground turkey
1 cup chopped onion
1 Tbsp. grapeseed oil
1.5 cups BBQ sauce (see below)
1 tsp. sea salt
1 can black beans
1 small can of green chilies
1 or 2 chopped chipotle peppers.
Heat oil in iron skillet and saute onions. Add turkey and cook until done. Add BBQ sauce along with green chilies, black beans, and chipotle and simmer until thick.
BBQ Sauce
1 cups organic tomato sauce
1/2 cup water
1/2 cup balsamic vinegar
1/3 cup raw honey
1 Tbsp. onion powder
1 Tbsp. garlic powder
1/2 tsp. sea salt
1 Tbsp. stoneground mustard
Mix all ingredients and bring to a boil. Reduce heat and simmer for 45 minutes.
