They say the way to man’s heart is through his stomach and since they seem to think everything taste better with BACON, give your man what he desires with this breakfast casserole!
- 8 slices of maple flavored thick cut bacon
- 2 cups milk
- 1 cup grits, quick cooking
- 1 ¼ cups water
- ½ tsp. salt
- ½ cup maple syrup
- 4 eggs, lightly beaten (or corresponding measurement of an egg substitute)
- Preheat oven to 400 degrees F.
- Lay out bacon in a single layer on a cookie sheet, bake for 10-12 minutes until crisp.
- Remove bacon strips to paper towel to soak up excess grease, but reserve drippings from pan then crumble bacon and set aside.
- Reduce oven heat to 350 degrees F.
- In a saucepan, bring milk, water and salt to a rolling boil. Stir in grits, reduce heat and cook covered for 3-5 minutes or until they thicken.
- Remove from heat, stir in maple syrup, half the crumbled bacon and the reserved bacon drippings.
- In a separate small bowl lightly whisk a ½ cup of the hot grits into the beaten eggs before mixing with the remaining grits.
- Pour into a greased 8” baking dish.
- Bake for 45-50 minutes or until a knife inserted into the center comes out clean.
- Top with remaining bacon crumbles, let stand for 5 minutes.
- Serve & enjoy!

Grits, bacon and maple syrup….there’s no way you could go wrong with those ingredients. You can bet this is going to appear on our table and I think it would be just as good at dinner.
