How to Cook a Butternut Squash

Winter squash has a tough exterior skin and many people tend to shy away since it is difficult to cut. Preparing a butternut squash is actually pretty easy! There is no need to peel it before baking. The skin actually falls right off after it has been baked.

The other great thing about winter squash is that they can be stored for a long period. I purchased this butternut squash from a farm just before Halloween. Just store it in a cool, dry place with nothing pressed up against it.

Baking Butternut Squash

Butternut Squash
Olive Oil
Salt & Pepper

Preheat the oven to 350 degrees. Cut the butternut squash down the middle so you have two halves. Scoop out the seeds and stringy part. Drizzle olive oil over the orange flesh and sprinkle with salt and pepper. Lay flesh side down in a baking pan. Bake for 35-45 minutes or until tender.

When you remove the butternut squash from the oven, you will notice the peel falls right off. You can then use the squash in a variety of recipes such as soup and pasta.

I will be sharing my favorite recipe soon- Butternut Squash Ravioli! What is your favorite winter squash recipe?
