I made homemade meatballs this weekend. My boys love meatballs- probably more than the spaghetti we ate them with! The nice things about meatballs is that they freeze very well.
I baked these meatballs and used a bakers rack to help drain the fat!
Meatball Recipe
1 lb. Ground Beef
1 lb. Ground Pork
3/4 Cup Italian Bread Crumbs
1/4 Cup Red Wine
1 Clove Garlic, pressed
1/2 Cup Grated Parmesan
1 Teaspoon Parsley
1 Teaspoon Italian Seasoning
2 Eggs
Heat oven to 350 degrees.
Mix all ingredients together in a large bowl. Place a baking rack on top of a cookie sheet. Form 1 inch balls and place on the baking rack.
Bake at 350 degrees for 15-20 minutes. Cook until the middle of the meatball is no longer pink. I got about 40 meatballs out of this recipe.

I used my homemade spaghetti sauce and whole wheat noodles to make our Italian feast. These meatballs would be great on the Mini Meatball Sliders too!
Tips
- Use different types of ground meat. For a healthier version, used ground turkey.
- For freezing, bake as directed above. Let cool completely and then place on a baking sheet. Freeze for a few hours and then place in a freezer bag. When you are ready to use the meatballs, place in marinara sauce and simmer for 20 minutes.

Where did you get your rack? I’ve been looking for a rack that I can put over a cookie sheet in my oven FOREVER!! I’ve seen one used on the Barefoot Contessa for oven fries and I’ve not been able to find one. What size sheet pan do you use it on?

I have had that rack for so long (like 10 yrs!)- I have no clue where I got it. The rack measures 9.5″ by 13.5″ and the sheet pan is 15.25″ by 10.25″. It really is a perfect fit!
I will have to try oven fries on the rack- that sounds good! We love sweet potato fries!
This looks really good but I also sent it on Facebook to my meatball loving friend. She makes them for most parties. I am going to twist her arm for the Super Bowl Party.
