Healthy Dinner Idea: Salad Bar

Salad Bar

Last week I was trying to think of a healthy dinner option that the kids would enjoy. In the warmer months I like to eliminate using the oven as much as possible. With a ton of produce in the fridge, I decided to make a salad bar. Little did I know this would be a HUGE hit with the boys!

In the last week we have had a salad bar three nights at the boys request. Each time it has been a little different based on the ingredients I have.

Protein ideas: Grilled chicken, taco meat, beans, chick peas, edemame, hard boiled eggs, sliced steak

Topping ideas: Croutons, sunflower seeds, sliced almonds, crunched tortilla chips, pecans

I allow the boys to choose whatever they want which is what makes this meal such a big hit. They love the freedom of choosing what they want on their salad.

This same idea could be used for a taco bar, baked potato bar or pizza topping bar!

A bonus for me is I take the leftovers from our salad bar and make my lunch for the next day! It really has been so easy! I can’t wait until our garden starts producing so we can enjoy our own harvest as part of the salad bar!
