A few years ago our favorite local bar & restaurant (back home) started making a fish sandwich during Lent that was to die for—-it was messy and loaded and aptly named a “Gut Buster”! Sadly they no longer make or serve these, but my husband and I recently made our own version and they were all I remembered and more! If you’re looking to try out a fabulous fish sandwich check out this recipe!
- (4) cod fillets
- ¾-1 cup panko bread crumbs
- 2 eggs
- 2-3 tbsp milk
- ½ tsp garlic powder
- Salt & pepper to taste
- ¼ cup olive oil
- 1 cup prepared Bush’s baked beans
- 1 cup prepared coleslaw
- 4 hoagie buns
- In a bowl large enough to dip fish fillets, beat eggs and milk together until well combined.
- In a second bowl large enough to dip and roll fish fillets, add panko bread crumbs and season with garlic powder, salt and pepper; stir to distribute throughout the mixture.
- Heat a skillet pan with olive oil to a fairly high heat in order to fry your fish fillets.
- Dip fillets in egg & milk mixture then roll in seasoned bread crumbs.
- Gently place each fillet as they are breaded in the heated oil and cook on each side for 4-5 minutes or until golden brown. Fish should flake easily with fork when finished cooking. Do not overcook.
- Meanwhile toast hoagie buns with a broiler or toaster oven.
- To assemble each sandwich spread the bottom half of each hoagie bun with ¼ cup prepared coleslaw, then position one fried fish fillet on top the coleslaw before spreading ¼ cup baked beans over the top of the fish fillet, position top of hoagie upon beans and gently press to hold sandwich together.
- Serve & enjoy! Yields 4 sandwiches!
