Simple and easy summer salad recipe that will help you get your daily dose of healthy vegetables and protein without a lot of time or energy! Toss it together for a quick healthy snack, a perfect accompaniment to lunch or an easy side dish at dinner time!
- (2) 15.5 oz cans of garbanzo beans (chickpeas), rinsed & drained
- (1) medium-large cucumber, diced
- (3) Roma tomatoes, diced (or substitute cherry tomatoes, halved)
- ¼- ½ small onion, diced
- ¼ cup balsamic vinegar
- 2 tbsp olive oil
- Salt & pepper (to taste)
- In a large bowl combine beans, diced cucumber, diced tomato and diced onion.
- In small bowl combine balsamic vinegar, olive oil, salt and pepper, whisk together.
- Drizzle vinegar and oil mixture over vegetables and toss to coat.
- Chill for at least 30 minutes. Serve and enjoy!

i had to change the amts a bit, only had one tomato, used one whole cuke, one can of chickpeas, added basil and a cup of blueberries. really fun!
