Simple and satisfying, this goulash recipe is a favorite from my childhood that even my child will eat (and she doesn’t eat anything)! It consists of minimal ingredients and requires minimal effort so it is a great recipe for those hectic days when you need to get dinner on the table with as little fuss as possible.
- 1-1 ½ lbs of ground turkey or beef
- #2 10 ¾ oz cans of condensed tomato soup (do not add water)
- 15.25 oz can whole kernel corn, drained
- 1 lb box Penne Rigate noodles (or preferred variety)
- 1 small onion, diced (optional---I am not a fan of onions so I omit this ingredient)
- Salt & pepper (season to taste)
- Dried basil (few shakes)
- Grated parmesan cheese
- Fill a pot with 4 quarts of water, bring to a boil and cook pasta according to package instructions.
- Meanwhile, in a medium sauté pan with lid, season meat with salt & pepper and brown meat on medium-high heat until thoroughly cooked. If you are using an onion cook along with meat at this time.
- Once cooked, drain to remove excess grease and return to pan.
- Add condensed tomato soup and corn, stir together, cover and continue simmering on low while pasta cooks.
- Once pasta is cooked, drain and add to sauté pan and mix all ingredients together.
- Sprinkle on dried basil and stir it in.
- Garnish individual servings with grated parmesan cheese and enjoy!
