Easy Goulash Recipe

Simple and satisfying, this goulash recipe is a favorite from my childhood that even my child will eat (and she doesn’t eat anything)! It consists of minimal ingredients and requires minimal effort so it is a great recipe for those hectic days when you need to get dinner on the table with as little fuss as possible.

Easy Goulash Recipe

Ingredients
  • 1-1 ½ lbs of ground turkey or beef
  • #2 10 ¾ oz cans of condensed tomato soup (do not add water)
  • 15.25 oz can whole kernel corn, drained
  • 1 lb box Penne Rigate noodles (or preferred variety)
  • 1 small onion, diced (optional---I am not a fan of onions so I omit this ingredient)
  • Salt & pepper (season to taste)
  • Dried basil (few shakes)
  • Grated parmesan cheese
Instructions
  1. Fill a pot with 4 quarts of water, bring to a boil and cook pasta according to package instructions.
  2. Meanwhile, in a medium sauté pan with lid, season meat with salt & pepper and brown meat on medium-high heat until thoroughly cooked. If you are using an onion cook along with meat at this time.
  3. Once cooked, drain to remove excess grease and return to pan.
  4. Add condensed tomato soup and corn, stir together, cover and continue simmering on low while pasta cooks.
  5. Once pasta is cooked, drain and add to sauté pan and mix all ingredients together.
  6. Sprinkle on dried basil and stir it in.
  7. Garnish individual servings with grated parmesan cheese and enjoy!
Notes
* Choose whole wheat varieties of pasta for a healthier alternative. * If you prefer not to use a condensed tomato soup (which I find adds creaminess to this dish) use tomato sauce and a can of diced tomatoes, but be sure to drain it first.
