Cookies come in all shapes and sizes, textures and tastes, but the dark chocolate, nutty & salty notes to this cookie might just top all the other cookies you’ve ever had! This is the perfect time of year to bake with pistachios. They tend to be an expensive nut. However, during the Holidays there are usually deals on pistachios!
This recipe makes about two dozen cookies. You might want to double the recipe; yes they are that good! For the sea salt, use just a pinch or a little more if you like salt. It all depends on your taste preferences!

- 1 ½ cups of all purpose flour (I used Gold’s Unbleached All Purpose Flour)
- ½ tsp. sea salt + additional for sprinkling on top of cookies
- ¾ tsp. baking powder
- ½ tsp. baking soda
- ½ cup unsalted butter, at room temperature
- ¼ cup granulated white sugar
- ¾ cup light brown sugar
- 1 egg
- 1 tsp. pure vanilla extract
- ¾ cup no salt added pistachios, shells removed & lightly chopped
- 1 cup dark chocolate, chopped (I used Ghirardelli 60% Cacao Bittersweet Chocolate)
- Preheat oven to 350 degrees F.
- Line a large cookie sheet with parchment paper, set aside.
- In a small bowl whisk together flour, sea salt, baking powder and baking soda.
- In a separate large bowl using an electric handheld mixer cream together butter and sugar until light and fluffy (approximately 2-3 minutes).
- Add egg and vanilla extract and beat for an additional 2 minutes.
- Slowly incorporate dry flour mixture into the wet ingredients and mix until just combined.
- Gently fold in pistachios and chocolate chunks.
- Scoop tablespoon sized portions, roll into balls and set 2 inches apart on prepared baking sheet; sprinkle lightly or liberally depending on preference with sea salt.
- Bake for 10-12 minutes or until edges turn light brown on the edges. Allow cookies to sit on baking sheet for 2-3 minutes before removing to a wire rack to cool.
- Serve & enjoy! Yields 2 dozen cookies.
