Health Benefits of Dandelion Greens

Dandelions are prevalent in our yard. My boys are often picking the yellow flowers and bringing me a bouquet! While many people try to rid their yard of dandelions, I don’t mind them. They are packed full of vitamins and the whole plant is edible! Dandelion greens contain a considerable amount of Vitamins K, D, C and Calcium. These greens also are a good source of protein and iron.

Whole Foods sells dandelion greens in the produce department for about $3 a bundle. However, if you don’t spray your yard, there is no need to buy dandelion greens. I collect the greens in my yard, wash them well and place them in my green juice.

Dandelion greens do haveĀ  a bitter, peppery taste. When I add the greens to my juice, I make sure to have some sweet fruit in there to offset the bitterness. I have read that if you saute the greens, it will take some of the bitterness out.

If you are foraging for dandelion greens in your yard, make sure you pick them in areas that are free from contaminants. That means in areas that herbicides, pesticides and chemicals have not been used.
