If you are looking for a new pie recipe for Thanksgiving, try this Cranberry Apple Pie with Cream Cheese! The crunchy topping is wonderful with the cream cheese bottom. It is a light, airy and seasonal recipe that was originally from here.
The cream cheese mixture is placed in the bottom of a pie crust. The apples, cranberries and cinnamon are then placed on top.
Add the crumb topping before baking. It’s like a crisp in a pie shell with sweet cream cheese!
- 8 ounces cream cheese
- ½ cup firm packed brown sugar, divided
- 1 egg
- 1 unbaked pie crust
- 2 cups sliced, peeled apples
- ½ cup halved cranberries
- 1 teaspoon cinnamon
- ⅓ cup flour
- ⅓ cup oatmeal
- ½ stick butter
- Preheat oven to 375 degrees.
- Mix the cream cheese and ¼ cup brown sugar with electric mixer on medium speed until well-blended. Next blend in the egg.
- Pour the cream cheese into a pastry shell in pie dish.
- Toss apples and cranberries with a ½ teaspoon of the cinnamon. Spoon over cream cheese mixture.
- In a large bowl mix flour, oats, remaining ¼ cup brown sugar, and ½ teaspoon cinnamon. Cut in butter with a pastry blender until mixture resembles coarse crumbs.
- Bake at 375 degrees for 40 to 45 minutes or until lightly browned. Cool slightly before serving.
