A healthy breakfast muffin for the health conscience consumer–subtly sweet and delicious paired with milk or coffee to get you fueled for your day!
- 2 cups all-purpose flour
- ⅔ cup whole wheat flour
- ¾ cup sugar
- 2 tbsp ground cinnamon
- 4 tsp baking powder
- ½ tsp salt
- 1 cup raisins
- 2 eggs
- 6 tbsp melted butter
- 1 cup milk (plus ¼ reserved)
- 1-2 tbsp cinnamon sugar blend
- Preheat oven to 375 degrees F.
- Prep 18 muffin cups with Bakers Joy or lightly grease with cooking spray.
- In a large bowl sift together flour, sugar, cinnamon, baking powder& salt. Stir in raisins.
- In a separate bowl whisk together eggs, melted butter and milk.
- Gradually add dry ingredients to wet and mix until well combined. Batter will be thick, but if it appears too thick and is hard to spoon add ¼ reserved milk to loosen a little.
- Spoon into muffin cups until ¾ of the way full.
- Sprinkle generously with cinnamon sugar on top.
- Bake for 15 minutes or until a toothpick inserted in center comes out clean.
- Serve & enjoy. Yield 18 muffins.
