I make homemade granola bars for my family every week. I try to always include flax seed and chia seeds for their health benefits. The kids don’t even know these ingredients are included in the bars! Flax seeds are full of omega-3 fatty acid and fiber. Chia seeds also have a high level of omega-3 fatty acid, fiber and protein.
In celebration of All Good April, I came up with this granola bar recipe using Carrington Farms Organic Milled Flax Seed and Carrington Farms Organic Coconut Oil. I had never used coconut oil in my granola bars before! Coconut oil has no trans & hydrogenated fats, and is perfect for healthy high heat cooking up to 350 F. With the added shredded coconut, it gave the bars a nice tropical flavor.
To make these granola bars, add the peanut butter or almond butter, honey, coconut oil, flax seeds and chia seeds to a sauce pan. I used almond butter this time since my boys can’t eat peanut butter in their classroom.
Stir ingredients together and heat over medium low heat. Keep stirring as the peanut butter and coconut oil melt. Turn off the heat when the sauce becomes a smooth consistency.
Mix in the rolled oats. Once the oats are mixed in, add the shredded coconut and chocolate chips. The chocolate will melt which allows for even chocolate distribution in the bars!
Line a pan with parchment paper and spread the oatmeal mixture. Pack the oats together tightly so the ingredients wills tick together when the bars are cut. Place in the refrigerator to cool.
When the mixture is cool, cut into bars and serve!
- ½ cup natural peanut butter or almond butter
- ¼ cup honey
- ¼ cup coconut oil
- 2 cups rolled oats
- 2 tablespoons milled flax seeds
- 1 tablespoon chia seeds
- ¼ cup shredded coconut
- ½ cup mini chocolate chips
- In a medium sauce pan melt the peanut butter, honey, coconut oil flax seeds and chia seeds over medium low heat. Stir constantly until melted. Turn off the burner when melted.
- Stir in oats and mix until combined.
- Lastly add in shredded coconut and chocolate chips. Stir until chocolate chips are melted.
- Pour into parchment paper lined 8x8 pan and stick in the fridge. Mine didn't fill up the whole pan as I wanted my bars a bit thicker.
- Once cooled, lift the bars out of the pan on the parchment paper. Cut into desired size. Store in the fridge.
