I love summer for its plentiful array of fresh fruits and vegetables, but there is something to be said about the comforts of winter and the hearty soups and stews to be consumed! This is one of my favorite soups on a cold winter day and I think you all will enjoy it too!
- 1 cup carrots, diced
- 1 onion, minced
- 1 cup celery, diced
- 2 tsp. garlic, minced
- 4 tbsp. unsalted butter
- 4 tbsp. olive oil
- 1 ½ cups chicken, cooked and diced or shredded (whichever you prefer)
- 1 quart half & half
- 14 oz. chicken broth
- ¼ cup all purpose flour
- ¼- ½ tsp. ground thyme (it’s a strong spice---start with less & add more to desired taste)
- Salt & pepper (to taste)
- 16 oz. homemade or prepackaged gnocchi
- 1 cup spinach, roughly chopped
- In a large pot (I used and enamel Dutch oven) over medium-high heat add butter, oil, garlic, carrots, onion and celery; sauté, stirring frequently until veggies are tender and onions are transparent (about 15 minutes).
- Add flour, stir and cook for 1 minute to form a roux.
- Add half & half and stir until it begins to thicken then add the chicken broth and continue to stir frequently until it thickens again.
- Meanwhile in a large pot bring 2 quarts of water to a boil and cook gnocchi for 2-3 minutes. They are finished cooking when they float to the top of the pot.
- Add the cooked gnocchi, chicken, spinach and seasonings to the pot; cover and simmer for 15-20 minutes.
- Serve & enjoy!
