The best thing about cooking is that a mishap or just one missing ingredient can often cause your creative juices to start flowing. This lead to the yummiest outcome that I never would have thought of if not under the gun so to speak! I had chicken ranch tacos on the menu and then realized I was out of lettuce (almost always the go to base for our tacos). The spinach on hand was needed for a different meal and there was no time to run to the store (and no desire to run to the store).
A quick peak in the veggie bin lighted on a bag of broccoli slaw that I often toss on salads for extra crunch and veggie consumption and the light bulb went on! I was making chicken ranch tacos so I thought why not toss the slaw in some ranch dressing too, add a little apple cider vinegar to stretch the dressing and add a hint of tang. We used the slaw instead of lettuce as the base for our tacos—it sounded good and feasible (and really I had no other ideas so went with it)! The tacos were delicious—spicy and creamy and the slaw had a satisfying tangy crunch that just made the whole thing work! A beautiful mistake!
- 2 cups plain broccoli slaw mix
- ¼- 1/3 cup ranch dressing
- 1-2 tbsp. apple cider vinegar
- Salt & pepper (to taste)
- Sliced mini red bell peppers
- Toss all ingredients together and chill.
- Use in tacos, on sandwiches, in wraps or pitas and/or eat as a side salad.
- Serve & enjoy!
Squirt a bit of fresh lemon, lime or orange juice in the mix for a hint of citrus.
Season with fresh dill, parsley, cilantro or basil!
