The other day I had some broccoli that needed to be used. Hubby and I really enjoy soup this time of year so I decided to make broccoli cheese soup! Not only did I use cheddar cheese but I used a little brie. This gave it a stronger but creamy flavor.
Broccoli Cheese Soup Recipe

Ingredients
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ¼ cup butter
- ¼ cup flour
- 3 cups vegetable broth
- 2 heads broccoli, florets chopped
- pinch nutmeg
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 cup milk
- 1 cup half and half
- 2 oz. brie
- 1 cup shredded cheddar cheese
Instructions
- In a large pot melt butter. Add onions and garlic and saute until tender.
- Wisk in flour to make a roux.
- Add vegetable broth and wisk until smooth.
- Add broccoli, nutmeg, salt and pepper to broth mix and cook for 10 minutes.
- When broccoli is tender, add milk and half and half. Heat until it just starts to boil.
- Remove from heat and use an immersion blender to blend the broccoli florets. I blended about half of mine and left some florets whole.
- Add brie and cheddar and stir until melted.
Notes
* If you don't like the strong taste of brie cheese, it can easily be omitted.
