Breakfast is the most important meal of the day (we can never stress this enough) but it doesn’t have to be plain Jane like cold cereal and milk—it can be fun, inventive, full of flavors and textures! Check out this recipe for a delicious and unique breakfast treat!
- 4 slices of whole wheat bread
- Butter
- 2 oz cream cheese, at room temperature (any variety---set out 15 minutes before prepping breakfast sandwiches)
- 2 tbsp confectioners sugar
- ½ cup fresh blueberries
- Honey (optional)
- Preheat a griddle or pan to high heat.
- Butter the outer sides of each slice of whole wheat bread.
- In a small bowl mix together cream cheese and powdered sugar until well combined.
- Divide the sweetened cream cheese and spread onto the inner side of two of the slices of bread, press ¼ cup of blueberries into the creamy mixture on each of the bread slices and top with the second set of bread slices (buttered side out).
- Place in heated pan and cook for 2-3 minutes or until golden brown, flip and cook other side for 2-3 minutes or until golden brown.
- Remove from pan, plate & drizzle with honey if desired.
- Serve & enjoy! Yields 2 servings.
