One of our favorite ways to eat summer squash and zucchini is breaded and fried. Of course this is not healthy at all! A couple of years ago I started baking the breaded squash instead of frying. It is still good but not full of fat. I don’t have the exact measurements for ingredients since it really depends on how much you are making!
Baked Breaded Squash Sticks
Summer Squash or Zucchini
Italian Dressing
Italian Bread Crumbs
Preheat oven to 400 degrees.
Wash squash and then slice into into 1/4″ thick sticks. Kind of like steak fries.
Pour Italian Dressing into a bowl. Dip the squash slices into the dressing. Pour Italian Bread crumbs into an additional bowl. Dip the dressing dipped squash into the bread crumbs. Coat all sides of the squash.
Place the breadcrumb coated squash into a baking sheet. Bake at 400 degrees for 15 minutes. Flip the squash over and bake for another 5 minutes.
Tips
- Dip in ranch dressing or marinara sauce.
- Try different dressing and breadcrumbs like Greek dressing and lemon pepper breadcrumbs.

Do you take all the seeds out? I didn’t know if I was supposed to or not- My neighbor gave me some and I did with the first one I fixed, but ??
I just boiled mine with a little butter, but your recipe sounds much better!
Hi Karin,
You do no need to take the seed out. Summer squash and zucchini seeds are really soft and can be eaten no problem. Good luck!
