With our chickens we get an abundance of eggs. I am always looking for easy recipes that call for a lot of eggs! I came across an Egg Biscuit Bake recipe that I modified based on what we had in the fridge. It turned out so good and the boys cleaned their plates!
Egg, Lit’l Smokies & Biscuit Bake
5 oz. Milk
8 oz. Mozzarella Cheese
1 teaspoon Dijon Mustard
10 Lit’l Smokie Sausages diced
2 tablespoons Butter
10 Eggs, beaten
1 (12 ounce) package refrigerated buttermilk biscuits
Preheat oven to 375 degrees.
In a saucepan, combine the milk, cheese and mustard. Cook over low heat until cheese sauce is smooth, stirring constantly. Stir in diced Lit’l Smokies.
Melt butter in a large skillet and add beaten eggs. Cook eggs and stir over medium heat until the eggs are set. Remove eggs from hear and add cheese sauce and stir gently. Spoon into an ungreased shallow 2-qt. baking dish.
Separate the biscuits and cut in half. Place with cut side down around outer edge of dish. Bake, uncovered, at 375 degrees for 15-20 minutes or until the biscuits are golden brown.
Tips
- If you don’t have Lit’l smokies, substitute diced ham.
- Use a variety of cheese or whatever you have on hand.
- Add vegetables like peas if you want.
- I did not have canned biscuits so I substituted canned Italian bread. I just cut the dough into small circles and placed around the edge of the pan. I used about a half loaf of bread dough.
