Try Something New: Parsnips

I love taking my boys to the produce department! I don’t necessarily enjoy the whole shopping experience with them- you know the “can I have” or “I want” that kiddos throw out. But in the produce department I don’t mind the “can I have”. Capt. M is very adventurous in trying new fruits and vegetables.

This week he had his eye on a white “carrot”. What Capt. M was looking at was a parsnip. He was thrilled that I bought parsnips for him! Of course this is funny since he has no clue what they taste like!

Roasted Parsnips

I roasted the parsnips with potatoes and rosemary from our garden and carrots. Root vegetables take awhile to cook- about 45 minutes at 400 degrees. Parsnips are sweeter than a carrot and have a little spice to them. I thought it they had a slight ginger taste to them.

I was so proud that both Capt. M and Mr. B tried the parsnips. Mr. B said he didn’t like them but he didn’t spit them out so that’s a plus. Capt. M is on the fence. He took a few bites and is undecided. That usually means he will try them again. As for hubby and myself, we liked them! Roasted parsnips and root vegetables will make a great Fall side dish.
