Shrimp & Pesto Pasta Recipe

Shrimp & Pesto Pasta

I love using shrimp in meals since it cooks quickly! I am lucky that my kids like it too. We have an abundance of tomatoes and basil in the garden so I had to come up with a new recipe. This is a perfect recipe for a weeknight meal!

Shrimp & Pesto Pasta

1 lb. Shrimp, peeled
2 Tablespoons Olive Oil
1 Clove Garlic, pressed
1/2 Box of Angel Hair Pasta
3 Tablespoons Basil Pesto
1 Cup Cherry Tomatoes, cut in half

In a large pot boil water and cook pasta according to package directions. While the pasta is cooking, place the olive oil in a skillet over medium heat. Add pressed garlic. Cook garlic for two to three minutes. Add the shrimp to the skillet. Cook until the shrimp is pink.

When the shrimp is cooked, add the pesto and cherry tomatoes to the skillet. Cook for two minutes. When pasta is done, drain the water. Add the pasta to the shrimp, pesto and tomato mixture.

Tips

  • I use whole wheat pasta for a little added nutrition.
  • The ingredients can vary in amount. Don’t be afraid to add more or less!

Now that is an easy recipe! Full of flavor and served in less than 30 minutes!

  1. I also like to make it with bow-ties or shells and then add in small cut pieces of cauliflower to trick my kids (I mean my husband) into eating more veges.
